Have you ever heard of blue corn? It is more nutritious than ordinary yellow corn and is the raw material for new exotic color products. Learn more here at Eat Innovation!

Did you know that there are different types of corn? In Brazil there is little variety, unfortunately, but in other countries it is possible to taste different colors and flavors like blue, white, red and multicolored corn.

Blue corn, also called Midnight Blue, is dark, almost black. It has small, firm grains. It has anthocyanin and other antioxidants, fibers and polyunsaturated fatty acids. It can be found more often in Mexico and the US, but there are some small producers dispersed in other countries.

It gives rise to very beautiful blue products. The popcorn made with it, however, is not blue, but almost white, like popcorn made from yellow corn. A smaller and sweeter popcorn, the difference is the peel (the one part that sticks to the tooth), which remains dark.
